Let me share what’s keeping me occupied nowadays. I love to watch anything about food online. Whether it’s a reality show or travel show that has something to do with food and cooking – you got me!
So yeah, I also try to do some occasional cooking in our kitchen when I’m in the mood. One of the staple ingredients that we have at home are potatoes. Who doesn’t have taters stored in their pantry, right?
It’s one of my favorite vegetables because it is affordable, easy to use, and most importantly, it’s packed with nutrients. It’s a source of essential vitamins and minerals like vitamin C, potassium, complex carbohydrates, fiber, vitamin B6 and even vitamin C, protein, calcium, and iron.
I’m sure you’d all agree that the potato has so many food applications. It serves as a blank canvass to many dishes, with only 110 calories per serving (148 grams, skin on). I also need to add that the potato is free of sodium, fat, cholesterol, and gluten!
We were on a celebratory mood because both our teens got high grades for this quarter, so I decided to prepare this extra special, but super easy to make dish using frozen curly fries. Check it out below.
Cheesy Bacon and Egg Potato Hash
Ingredients:
- 1 ½ cup frozen curly fries
- 2 strips bacon (fried and diced)
- spring onions, chopped
- 1 large egg
- 1/4 cup mozzarella cheese
- cooking oil
- salt and pepper, to taste
Procedure:
1. Heat oil in a pan.
2. Fry the potatoes and stir occasionally until golden brown. You can also use the air fryer.
3. Add the fried and diced bacon to the pan.
4. Add the spring onions.
5. Season with salt and pepper.
6. Using a wooden ladle, make a space in the middle of the pan.
7. Crack an egg. Fry until the egg is cooked.
8. Top with mozzarella cheese until it melts.
9. Serve immediately.
Yay! Achieved that restaurant quality taste and presentation, which the #GioTeens and the hubby enjoyed eating. This recipe can be served as breakfast or snack.
